Mother's Day Cupcakes at The Sugar Suite!

This Saturday May 12th we will have our mom's favorite flavors from 10-2 at The Sugar Suite!

When deciding what flavors to make for Cupcake Day, we asked our moms what THEIR favorite flavors are, and here is what they said:

- lemon poppy cake with purple (her favorite color) vanilla bean buttercream and raspberry filling

Chocolate and Salted Caramel -
chocolate cake, chocolate buttercream and sea salted caramel ganache
*Winner at the 2012 Festival of Chocolate for "Best Chocoalte Cake" and "Best of Show"

Pina Coloada - white coconut flavored cake (no flecks), vanilla and Meyers Dark rum buttercream and caramelized pineapple filling

Spring Cupcake Day at The Sugar Suite



Saturday, April 7th is Spring Cupcake Day! Come by our shop in Maitland  on Saturday April 7th from 10:00AM - 2:00PM.


We will have four flavors available for sale:
Coconut - with almond cream cheese and shredded coconut
Lemon Poppy - with vanilla bean buttercream and raspberry filling
Strawberry Blonde - vanilla cake with strawberry buttercream
Carrot Cake - with cream cheese icing and caramelized carrots
All in our festive Spring decor!

Extreme Flowers with Ron Ben-Israel!

Yesterday I got back from an incredible flower class taught by Ron Ben-Israel. The class took place at Custom Cakes in Savannah, GA at the bakery of Minette Rushing whom I affectionately call my Fairy Godmother of Cake! 
Ron is a wedding cake designer from NYC that specializes in sugar flowers and really spectacular wedding cakes.
Not only is Ron an credible talent, but he is an excellent business man and very generous with his knowledge and experiences.  The last half our of each class students are encouraged to ask questions about cake, business and himself... he's an open book!
The title of the class was "Extreme Flowers" meaning extremely large and extremely small.  

First was the rose. Below is my rose which was approximately 7" in width,  These roses don't exist in nature, but during the Victorian time people would place additional petals behind a rose to great a giant flower called a Glamelia.


The next extremely large flower we made was the Orchid, which also measured 7+"  the flower is made up of 7 wired petals and and the center was hand painted with the red detail.  To finish the petals we added a small amount of pearl dust to give it a shimmer.

Then we moved onto the extremely small. 
The traditional wedding flower the Stephanotis and the mini-mini Lilac. We also made some Lily of the Valley, Princess Kate's wedding bouquet choice!


These are the roses that Ron made with his signature spiral and pointed edges.

Tiffany Tile Pattern

When I met with Alex and Ron to design their wedding cake, I asked them what their favorite thing about the wedding was... and Alex quickly answered the invitation!  They loved the detailed pattern of the tile pattern in tiffany blue & deeper blue and was especially drawn to the masculine chocolate brown lines.

Although the idea for the sketch seems simplistic, the piping sure was not! In order to get the level of detail in the invitation I would use a royal icing and invert the pattern.  To top it off, we made a custom "AR" topper with intertwining lines as their monogram. For gay couples and couples where the bride is not taking the grooms last name I recommend using the first name initials for the monogram.  It keeps the traditional feel of a monogram, but customized to the modern couple!

The NEW Alice in Wonderland


The NEW Alice in Wonderland is no kittens and rainbows movie.  The movie's artsy interpretation of the Lewis Carrol novel is visually stunning, no wonder young adults are swooning (not to mention Johnny Depp is in it!).  This cake was created for a sweet sixteen based on the design by Michelle Sugar Art in the UK.

Cobalt Cosmos


Some clients you just connect with right away, Cassie and her mom Annette were those types of clients!  Cassie wanted something bold and modern to fit her ultra modern venue, The MEZZ in downtown Orlando.  She loved the fresh and sharp color contrast of white and cobalt, and I couldn't agree more!  She also wanted to incorporate some bling for flair!  She ended up finding 4 gorgeous brooches that we used as centers of the cosmo inspired flowers.  We made little sugar jeweled centers for the cosmo buds to compliment the larger flowers.

I wanted to design to use clean cobalt ribbon for lines to reinforce the modern style she wanted for the reception. Lastly, I used silver dragees around the flowers to bring in more bling, but also making the buttercream look more full (and not so naked)

The Cake


The cosmos were made with a parrot tulip cutter, and heavy veiner.  The brooches, which had see-through areas between the diamonds were backed with white fondant, which became invisible in the final product.  A wire anchored from the backing of the brooch, stabilized the placement of the flowers.  We achieved the blue with a sapphire edible luster dust over already blue gumpaste.  All that being said, we had to remake them three times before getting this final flower.... but it was all worth it when we received this email from the bride the following day (*squeal!)*):

"Jennyfer!!!! Everything was beyond perfect. The cakes looked and tasted amazing. Thank you so much for helping us!"

Bohemian Elegance

David and Alaina came to our design consultation with their dream cake already in hand! They found this photo from The Knot and loved how it was different, not like any other cake.  They wanted something original, something that would fit with the vibrant personality of their venue, and most of all something that was elegant.
(This amazing cake was made by Nine Cakes in Brooklyn, NY)

We made a couple of design choices to personalize the cake.  Their reception was at The Grand Bohemian Hotel, a modern artsy hotel in downtown Orlando. We pulled in some of the hotels colors of cranberry, eggplant, and lots of metallics to give the cake a more sophisticated feel.  The couple also liked the idea of having the florals in a cascade pattern on the cake.  Aside from design, it was really important to them that the cake be buttercream, no problem!
